Recipe

  • 1 oz lucid absinthe verte

  • 0.5 oz aelred melon aperitif

  • 0.5 oz fresh pineapple juice

  • 0.5 oz lemon balm syrup*

  • 0.75 oz lime

  • top w/ cava

lemon balm syrup

  • 100g lemon balm leaves
  • boiling water
  • blanch lemon balm for 10 seconds and shock in an ice bath
  • cool blanching water
  • pureé lemon balm with 1000g chilled “lemon balm tea”
  • strain and add equal parts sugar
