Recipe

  • 1.5 oz spirulina infused gin*

  • 0.5 oz coconut gin**

  • 0.75 oz lime juice

  • 0.5 oz kalani liqueur

  • 0.25 oz lime syrup***

  • 5 drops salt solution

*Spirulina infused gin:

  • 1 Liter gin
  • 2 grams blue spirulina
  • Add to a jar and shake well. Let sit at room temperature for 30 minutes.
  • Strain and filter.

**Coconut Gin

  • 200 grams toasted coconut flake
  • 1 Liter gin
  • Sous vide. Fat wash. Spin in Centrifuge

***Lime Syrup

  • 35 grams lime zest (use microplane)
  • 850 grams sugar
  • 500 grams hot water
  • Immersion blend all ingredients together until sugar is dissolved. Let stand for 30 minutes. Pass through strainer
