Recipe

  • 1 oz Pinhook rye whiskey

  • 0.5 oz Mahia fig brandy

  • 0.5 oz clarified fig cordial*

  • 0.75 oz Cardamaro

  • 0.5 oz Ceasar Florido cream sherry

  • 5 drops 20% salt solution

  • Garnished with a fig leaf from the KH fig trees

*Fig cordial

  • 1200g figs, thinly sliced
  • 1200g water
  • 600g sugar
  • 12g citric acid
  • 6g malic acid
  • Cold infused in vacuum bag for 1 week
  • Strained and ran through a centrifuge
  • After centrifuged, it’s fortified with 10% fig brandy
