Recipe

  • 1.5 oz Uruapan Charanda blanco

  • 0.5 oz Clairin Milot

  • 0.75 oz kumquat cordial*

  • 0.75 oz lime

  • 4 droppers mint extract**

*kumquat cordial

  • 500g nordmann seedless kumquats
  • 1000g 1:1 sugar syrup
  • 10g citric acid
  • Blend at 25% in a Vitamix for 30 seconds. pour unstrained into a deep pan.
  • Compress 3x in a Chamber vac (this helps rapidly infuse the kumquat into the sugar and water)
  • Strain through a large conical strainer
  • Tip: If you are making this at home and don't have a chamber vac, after you blend pour unstrained into a container and infuse for 24 hours in the fridge before you strain.

  • 500g grain alcohol (95%)
