Blend at 25% in a Vitamix for 30 seconds. pour unstrained into a deep pan.
Compress 3x in a Chamber vac (this helps rapidly infuse the kumquat into the sugar and water)
Strain through a large conical strainer
Tip: If you are making this at home and don't have a chamber vac, after you blend pour unstrained into a container and infuse for 24 hours in the fridge before you strain.
