Recipe

  • 1.5 oz marzipan infused 100 proof bourbon*

  • 0.75 oz punt e mes

  • 0.5 oz roger groult 3 year calvados

  • 0.5 oz ceasar florido oloroso sherry

  • 4 dashes angostura bitters

  • 3 drops citric acid solution

*Marzipan infused bourbon

  • 250g Marzipan**
  • 1 liter 100 proof bourbon
  • 10g almond extract
  • Puréed, passed through fine mesh strainer, and then ran through the centrifuge.
  • Strained again through filter, then put in freezer overnight, and strained one more time through a coffee filter. 🤦‍♂️

**Marzipan

  • 500g whole blanched almonds
  • 375g white sugar
  • 125g 2:1 sugar syrup
  • 125g water
  • 10g almond extract
  • 2.5g rose water
  • Process almonds in a Robot Coupe or food processor until finely ground. Add sugar and process again.
  • While running, add the water, 2:1 syrup, almond extract and rose water until everything is nicely incorporated.
