Recipe

  • 0.5 oz clarified cantaloupe 'nectar'*

  • 0.5 oz aelred melon aperitif

  • 0.5 oz dolin dry vermouth

  • 0.25 oz faccia brutto centerbe

  • 3 drops citric acid solution (1:5 citric acid to water)

  • Instead of garnishing with an olive, we have a 'honeydew olive'. It's honeydew compressed in a salt brine

  • 1000g cantaloupe juice
  • 250g 2:1 sugar syrup
  • 50g citric acid solution
