Recipe

  • 2 oz Dudugnon selection cognac

  • 0.75 oz Eufemia 10 yr. tawny port

  • 0.5 oz Clarified strawberry cordial*

  • 0.5 tsp La Muse Verte Absinthe

  • 2 dashes Angostura bitters

  • Served in a chilled snifter

*Clarified strawberry cordial

  • 600g georgia strawberries, thinly sliced
  • 600g sugar
  • 1200g water
  • 12g citric acid
  • 6g malic acid
  • Cold infused for 1 week and strained.
  • Then we add .2% Pectinex SPL and run it through the centrifuge.

Note: I realize most don't have, need or want a centrifuge. If you very gently strain this cordial through a strainer with an oil filter (or coffee filter) inside, it will come out pretty clear and you can use this ingredient in stirred drinks with great results.
