Recipe

  • 2 oz probitas rum

  • 0.75 oz lime

  • 0.5 oz sorrel syrup*

  • 0.25 oz passion fruit juice

  • 10 drops 20% salt solution

  • 100g french sorrel leaves
  • 750g water
  • 250g crushed ice
  • pureé sorrel leaves in blender with water and ice on high
  • strain, weigh liquid and blend in equal parts sugar
