Recipe

  • 1.5 oz light rum

  • 0.75 oz strawberry syrup*

  • 0.75 oz lime juice

  • 0.5 oz Alpe Genepy

  • Top w/ one ounce cava

*strawberry syrup:

  • 600 grams hulled and quartered strawberries (ours are from @woodlandgardensathens )
  • 900 grams cold 1:1 simple syrup
  • Puree on low in a vitamix or any blender really for 30 seconds.
  • Compress 3x in a chamber vac and strain through a chinois or large strainer of some sort. If you don't have a chamber vac, after you puree, let rest in the fridge overnight to cold infuse and then strain the next day. This is a very easy fruit syrup method and works with pretty much anything.
