Recipe

  • To build the drink

  • Add 3.5oz batched milk punch to chilled mixing glass over cubed ice and stir briefly to chill (there is already some dilution from the whey)

  • Strain into chilled Old Fashioned glass over a large cube (@kingcubeice)

  • Float .25 oz Hibiscus infused Pisco*** to finish

Clarified Strawberry Milk Punch

  • 2 Liters Pisco
  • 1 Liter RumFire Jamaican Overproof Rum
  • 1 Liter Alpe Genepy
  • 1.5 Liters Strawberry Cordial*
  • 1 Liter Lemon Juice
  • 3 Liters Strawberry Milk**
  • Put the 3 Liters Strawberry Milk in a large vessel
  • Build the rest of the punch in another large vessel. Whisk well to combine.
  • Vigorously pour the punch onto the strawberry milk and allow to settle for 10 minutes. Strain through a conical sieve with a filter to allow the mixture to clarify
  • This takes time. Be patient (we let it slowly filter overnight in the walk in cooler).

*Strawberry Cordial

  • 600 grams thinly sliced strawberries
  • 1200 grams water
  • 600 grams sugar
  • 12 grams citric acid
  • 6 grams malic acid
  • Blend the sugar, water, and acids together. Add Strawberries. Cold infuse 48 hours. Strain

Strawberry Milk

  • 1000 grams strawberries, thinly sliced
  • 1 gallon whole milk
  • Sous vide 2 hours at 140 F
  • Rest in the bag overnight in the cooler. Strain

Hibiscus infused Pisco

  • 75 Grams dried hibiscus
  • 750ml pisco
  • Vac and cold infuse for 2 hours. Strain through filter
