Add to rum while still hot and cook sous vide at 140F for two hours.
Strain while still warm (do not ice bath as yield will be higher)
Freeze overnight to "fat wash". Strain through a large conical strainer with a filter.
**Fig Leaf Extract
Roughly chop fig leaves. Toast in a 350 degree oven for one minute (yes, one minute. Set a timer)
Weigh fig leaves and add 500% golden grain (ex. 100g fig leaves, 500g golden grain)
Cook Sous Vide at 140 degrees F for 2 hours. Ice bath and strain immediately through a filter (wear gloves). Squeeze to get full yield.
Fig leaves have a really coconut/cinnamon thing going on when briefly toasted like this.
If anyone actually makes this extract, you will strain it and think, this doesn't smell like anything but booze. The aromatics are trapped in the ethanol. pour some in a glass, add water and watch it turn bright green and then smell it. Pretty damn cool.
