Recipe

  • 2 oz Mezcal

  • 0.75 oz lemon juice

  • 0.5 oz ginger cordial

  • 2x dropper cinnamon tincture**

  • 1.5 oz carolina gold rice horchata***

*ginger cordial:

  • equal parts fresh ginger juice and 1:1 sugar syrup

**cinnamon tincture:

  • 100 g cinnamon, cracked in a bag with a mallet
  • 500 g 151 proof demerara rum
  • sous vide @ 140 for 2 hours, rest overnight, strain and filter

***carolina gold rice horchata:

  • 500 g @ansonmills mills carolina gold rice
  • 1000 g water, plus more to rinse & soak
  • 500 g coconut milk
  • 500 g sugar
  • 50 g vanilla extract
rinse rice with warm water and then soak in cool water for 2 hours.
puree rice with 1000g water and pass very well through strainer
blend in sugar, coconut milk and vanilla extract.
